Kudus, 25/10/2024 – One crucial step in the post-harvest processing of coffee beans is the removal of the coffee skins. This process, known as peeling, separates the coffee beans from the outer layer of the coffee fruit, called the “pulp” or “mesocarp.” Once peeled, the beans can be dried, fermented, and further processed. Peeling is a critical stage in coffee production; if done improperly or roughly, remnants of the pulp or mucilage may remain on the beans, potentially affecting the taste. Therefore, there is a need for modern machines that can address this issue effectively.

Currently, small enterprises such as Kopi Itheng Argo Mulyo and Kopi Muria Tastyco still rely on simple tools for peeling, leading to imperfect skin removal, longer processing times, and wasted energy. To address this, the PKUM Community Service Team, led by Hermawan Dwi Ariyanto, S.T., M.Sc., Ph.D (a vocational lecturer at Undip), has supported Kopi Muria with a specially designed coffee huller. This huller automates the peeling process, replacing the time-consuming and labor-intensive manual method. The new machine ensures faster, more accurate separation of coffee bean husks from the parchment, reducing waste, increasing production capacity, and ensuring more consistent coffee quality. In addition, coffee packaging plays a vital role in product marketing. High-quality packaging preserves the coffee’s aroma and enhances its appeal to consumers. Neat, professional packaging leaves a positive impression, helping coffee products stand out in the market. Unfortunately, Kopi Muria lacks modern packaging equipment, which means their coffee products do not stay fresh for long and face difficulties competing in the market. To address this challenge, the Vocational School’s community service team has assisted Kopi Muria in adopting effective marketing strategies, particularly through the use of a sealer machine for packaging. This will help maintain the quality of Kopi Muria and attract consumer interest.

The owners of Kopi Itheng Argo Mulyo Sejahtera, Abdul Rohman, and Kopi Muria Tastyco, Shinta Dwi Mutiarani, are thrilled with the support provided by the huller and sealer. These tools have significantly improved the peeling and packaging processes, which were previously done manually, consuming considerable time and yielding inconsistent quality. The introduction of these modern machines has revitalized their spirits, offering a new path to producing higher-quality coffee. This support comes after about 1.5 years of challenges faced by both small enterprises, which were affected by the global COVID-19 pandemic, significantly impacting their coffee production.
